Strawberry gum (Eucalyptis Olida or Forestberry) is used to enhance the flavour of cooked fruit dishes, desserts or spiced jams, bringing out the classic ‘berry’ flavour. The tree occurs naturally in northern New South Wales.
A mild strawberry/eucalyptus flavour, with strawberry aroma. Use to flavour sweet breads or scones.
