<p><span style="font-family: Tahoma; font-size: x-small;">My husband has been placed on low sodium diet. No table salt. So I have made a substitute using sesame seeds, celery seeds, ground rice and saltbush leaves. All ground finely in coffee grinder. As he is using it (moderately) on meals without grumbling about loss of salt container, it seems to be a success. (Yvonne)</span><br />

Using Aussie foods including herbs and spices is not only a wonderful taste adventure, but the health benefits are great too!  For example, Mountain Pepper has antioxidants and Saltbush has vitamin E and other vitamins!  Healthy!  Delicious!  Australian!  Way to go!  (Dawn)</span><br />

A great way to use lemon aspen is to cook it out with a little water in a saucepan. You then puree it and cool it down. You can now use this in a dressing, cheesecake, marinade or just about anything. (Matt)</span><br />

Lemon Myrtle and mango combined make a great marinade for prawns. Just mash a ripe mango, then add lemon myrtle to taste, some fresh chilli to taste and then slacken it with a bit of oil, coat the prawns and marinade for 20 minutes, wack on the barbie until cook and serve with a fresh salad and mango salsa…….yummo! <p>However  our search for new ingredients widened after a recent trip to New  Zealand.  We experimented with samples of <a href="http://bushfoodshop.com/prod134.htm" target="_blank">Horopito (NZ Bush Pepper)</a> and  <a href="http://bushfoodshop.com/prod135.htm" target="_blank">Kawakawa (NZ Wild Basil)</a> and were so impressed we thought those with a  sense of adventure may like to taste as well.</p>
<p><strong>Meat Balls in a Peppery Sauce<br />
</strong><br />
Turn oven on to 180C</p>
<p>In a bowl mix together 600gm Kangaroo Mince, 1 diced onion, 1 cup breadcrumbs, 1 teaspoon <a href="http://www.bushfoodshop.com/" target="_blank">Sea Parsley</a>, 1 teaspoon  <a href="http://www.bushfoodshop.com/" target="_blank">Native Basil</a>, 1 teaspoon <a href="http://www.bushfoodshop.com/" target="_blank">Native Thyme</a> and 1 teaspoon salt.  Leave to sit while you make the sauce.</p>
<p>In a pan, place a tablespoon of oil, then add 1 diced onion, 2 minced cloves of garlic and fry for about 2 minutes.  Then add 350gm fresh tomatoes roughly chopped, 1 green capsicum cubed, and 1 potato cubed, cook for another 2 minutes.  Then add 65gm diced bacon and cook another couple of minutes before adding 1 teaspoon of <a href="http://www.bushfoodshop.com" target="_blank">Horopito</a> (NZ Bush Pepper), 1 teaspoon <a href="http://www.bushfoodshop.com/" target="_blank">Kawakawa </a>(NZ Wild Basil), and 1 teaspoon <a href="http://www.bushfoodshop.com/" target="_blank">Ground Bush Tomato</a> (Kutjera) and allow to simmer for 2 minutes.  Then add a 400gm can of tomatoes and a teaspoon of lemon myrtle.  Mix well.  Bring to the boil and then turn off.</p>
<p>Now take small handfuls of the meat mixture and roll into balls.  Place the balls into a baking tray and then cover with the sauce.</p>
<p>Place in oven for approx 1 hour and serve with steamed potato.</p>
